What is better to cook with? Charcoal or Heat Beads?

A common question from first time Weber Charcoal Kettle BBQ users is do I buy Heat Beads or Lump Charcoal? The easy answer for first time users of the Kettle is Heat Beads. Why? Because they light easy (if you have a Chimney Starter they will be ready in 15min)  and the Weber Cook book shows you how many to put in the charcoal baskets. This will get you off to a great start.

You will also need patience. This is not a gas BBQ. You should pre-heat the BBQ for 10mins and cooking time will generally be longer if you are using the indirect method. For the direct method (putting the coals directly under the meat) then the cooking time will be around 8 minutes either side of a average steak.

What do I need to get started?

Getting started with a Weber Kettle is easy.  The key ingredients are:

Roast-Chicken Weber Kettle Getting a fresh chicken is often the best and easiest first step in a Weber Kettle. Follow this link for a great chicken basting recipe.  Then simply light your heat beads by following the chimney starter guide. Once the heat beads are grey (wearing gloves) pour the heat beads into their baskets, making sure they are pushed to opposite sides of the Kettle bowl. pop the cooking grill in place and then the chicken on top of that.

Cook for around 1.5 hours and enjoy.

You can get an inexpensive (around $20) from Bunnings but for a premium Chimney Starter you couldn’t go past the Weber Rapid Fire Chimney Starter.

How to use a Chimney Starter: Simply put two firelighters on the charcoal tray or V-Grill of your Weber Kettle. then we generally suggest a couple of scrunched up news paper pages for extra heat. Fill your charcoal baskets with as many heat beads / charcoal that you are going to use. Then empty the contents into the Weber Rapid Fire Chimney Starter. Proceed to light the firelighters and the rolled up newspaper. For heat beads it is generally 15min until they are ‘grayed over’ ready for you to pour them into the charcoal baskets. Charcoal could take longer due to its dense nature. Warning, always wear protective gloves and take care of any ash that might jump up at you when you are doing the pouring.

The difference between the Weber Compact Kettle and Weber Original Kettle is that later sits 1 cm higher than the Compact Kettle which one wouldn’t think is very much but any little bit of height will save your back strain. This amazing machine comes with some impressive features that we will identify in the following.

 

 

 

Weber-ThermometerThe first key difference to this amazing cooking unit over the Weber Compact Kettle  is it’s inbuilt thermometer. Showing both Fahrenheit in Red and Celsius in Black. If you are following a YouTube cooking demo or grabbing a recipe from the US you can easily follow the Fahrenheit on the thermometer dial.

When cooking on the Kettle BBQ you want to minimize the number of times you open the lid because every time you do, you lower the grill temperature and effectively lengthen the amount of time for the cook.  If you are planning a long cook maybe with the How to BBQ with the Snake Method in a Weber Kettle then as the day goes on and your temperature begins to drop, work your top vent to allow more oxygen to flow through the kettle. If your temperature really drops, add some additional lit coals to get your temperature back up. However, in most cases this is not necessary.

Weber-Kettle-Hinged-GrillAnother difference between the Weber Compact kettle and the Weber Original Kettle is the triple plated chrome cooking grate comes with lift up hinged sides. This means that if you need to drop some additional charcoal / heat beads into the BBQ then lifting the hinge with some tongs is far easier that lifting off the whole grill as you will have to do on the Compact Kettle.
Also note that the grill thickness increases with all Kettles here on which means arguably an extended life.

What is a Weber premium ash catcher? It’s really just a pan that is fitted neatly into the bottom of the Weber Original Premium Kettle BBQ to catch the ash from on average 10 roasts or uses. This of course depends on how often you use it! A benefit to the premium ash catcher is that it stops the ash from blowing away or even having pets and pests come and lick the ash catcher which is standard on the Original Kettle and Compact Kettle. A worthwhile investment.
