Simple Barbecue Steak Rub
– One teaspoon of rice flower
– One teaspoon of salt
– One teaspoon of smoked paprika
– One teaspoon of onion powder
– One teaspoon of garlic powder
– One teaspoon of dried basil
– Half teaspoon of white pepper
Place all ingredients into a mixing bowl and stir thoroughly. Generously sprinkle the steaks with the rub and cover with glad wrap. Place in the fridge for 30 minutes.
Pre-heat your Weber Genesis 2 Barbecue for 10 mins with the lid down. This process heats the cooking body of the barbecue and the cast iron enamel coated grills.
Cooking on the Weber Genesis 2 Barbecue
When you have pre-heated the Barbecue for 10mins and the temperature is sitting around 180 degrees you are ready to open the lid. Don’t worry too much about the heat loss the BBQ will re-heat quite quickly once you close the lid.
Take your steaks out of the fridge and place them on the hot grill. Give them a gentle press down to get good contact with the barbecue and the perfect caramelisation.
Cooking times for Weber Genesis 2
The following cuts, thicknesses, weights and barbecuing times are meant to be guidelines rather than hard and fast rules. Cooking times are affected by such factors as altitude, wind, outside temperature and how well done you like your meat.
Steak: rump, porterhouse, fillet, T-bone, or sirloin (medium) barbecue cooking times.
12mm thick barbecue 2½ to 3 minutes per side
20mm thick barbecue 3 to 4 minutes per side
25mm thick barbecue 4 to 5 minutes per side
30mm to 40mm thick 14 to 16 minutes (total) barbecue 5 minutes per side
Post cooking leave your meat to rest for 1 minute to allow the flavours to melt into your meat.
